Winter is definitely here, and there's nothing better on a chilly, mizzy day than sitting around the table and having a family roast. Cooking up a storm in the kitchen is such fun when you have the right ingredients! Whether it's roast lamb or chicken served with potatoes or butternut, peas or green beans, we have a great recipe for dressing a variety of side dishes!. The best thing about this recipe is that it can be used in so many ways. Our favorite use is tossed with roasted baby potatoes, but we also suggest drizzling it over butternut or sweet potatoes. This dressing can also be used over a cold salad. So snacking on cold potatoes the next can be a real yummy treat. Theres nothing quite like a sticky potato!
- 1kg Baby potatoes
- 1 cup Extra virgin olive oil
- 1/3 cup Balsamic vinegar
- 4 Tbsp Sweet chilli sauce
- 1/2 Red onion ( chopped )
- 4 Tbsp Brown sugar
- 1 Handful fresh coriander ( washed )
- 1 Handful fresh mint ( washed )
Place all the ingredients in a food processor and blitz till smooth. The dressing won't be completely smooth because of the onion and brown sugar. If you do not have a food processor don't worry you can either use a hand blitzer or finely chop the ingredients and whisk together. Toss your baby potatoes in some olive oil, salt and pepper. Place on a baking tray and cook on 180c for 20min or until soft but not mushy. You want them to keep their shape. Once they are cooked, put in a bowl and pour your dressing over them. Give them a mix and viola !! There you have it! A delicious side to your roast. If using as a salad, crumble some feta over the top to finish it off.
