Coconut comes in many forms and has many uses in cooking, nutritionally speaking it is very high in good, natural fats.
I'm going to highlight Coconut flour as a healthier option for baking when compared to a usual wheat flour, it adds a rich nutty flavour and has 5 grams of fiber per 2 tablespoons. Can you believe it!? Fiber is important for helping your body to rid itself of toxins as well as lower cholesterol in the blood. Coconut flour also has health benefits for people with diabetes: adding coconut flour to baked goods such as cakes or biscuits, lowers the glycemic index (a measure of the rate that a food increases blood sugar). At Sprigs we stock the beautiful Crede brand of coconut flour which retails at R56 per 500g and we have a range of biscuits that include this superfood in the list of ingredients.
Moving on to fresh Coconut meat, water, and oil. It is of course nutritionally superior to dried flakes or powder. The reason being it contains more liquid, which dilutes the fat and calories. We have PureCoco water in three flavours here at Sprigs: Original, Mango and Pineapple. All these are naturally sweetened with pure fruit juice. Delicious and refreshing post workout!! We stock Crede Virgin Coconut Oil and organic coconut oil 500ml and 1 litre jars. Use the oil when frying instead of olive oil, which is best used at room temperature.
Next we chat about dried flaked coconut or dried shredded coconut. These are the most convenient to cook or bake with. You can buy desiccated coconut in most local stores and it's even tastier if you toast the grains till lightly golden, Reason for toasting it would be to help it release its natural oils and provide a stronger flavor. To toast it, heat it up in a small pan on a medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 5 minutes or spread in a shallow baking dish and bake at 160 degrees until light golden and fragrant, 5 to 10 minutes. You can use dried shredded coconut or coconut flakes in cooking and baking. We love using it in Our divine coconut pecan squares!! yummy with a cup of tea or coffee of course… (we do have a sweet tooth).
